Quail with beans
Ingredients for 4 people
4 Urgasa quails
200 g of flat green beans
3 tender spring onions
50 g of butter
2 spoonfuls of sugar
4 spoonfuls of vinegar
1 spoonful of olive oil
Pepper, chopped parsley and salt
Preparation
1. Chop the quails into even-sized pieces and season with a little salt. Wash the onions and cut the white part into thin round slices.
2. Prepare the green beans and boil them in salted water until they are cooked but still a little crunchy (al dente). Drain them and put them to one side in a bowl.
3. In a frying pan, heat the oil with the butter until it melts. Add the pieces of quail and fry them on a very hot flame until they are golden brown. Add the sliced onions and fry everything together for a few minutes then leave to simmer on a low heat for approximately 8-10 minutes.
4. Remove the meat and leave it to cool. In the frying pan, add the sugar, vinegar and red pepper and cook it together for a few seconds on a very hot flame, stirring continuously. Pour the contents of the pan on the green beans and turn them over carefully to make sure they are covered with sauce.
5. Place on individual plates and place the pieces of quail on top of the green beans. Serve immediately, sprinkled with parsley.
